We're having difficulty reproducing this (not having a 4GB PST doesn't help). But use of Windows VSS (to copy open/locked files) does seem to internally suppress use of ExtremeCopy anyway (tested/checked), so not sure why turning it off helped your situation. Plus, as stated before, the copy of the open/locked file had already taken place (the error was in the rename of the SafeCopy temp file). We also tried it with a 5GB DVD ISO file (in case it was a 32-bit integer (max 4GB) issue) with SafeCopy & ExtremeCopy both in effect simultaneously - without any problems.
If you have the time, can you set Output Debug Info, set ExtremeCopy back on temporarily, make sure SafeCopy is on, open Outlook, then run the profile again to the standard location. If you get the error, generate a Support Zip immediately (do not edit the profile beforehand!), sign up for free ticketed support and submit a Support Ticket with that Support Zip?
