You could put a 1 minute (or whatever) delay in the 2nd profile? See the Misc settings page. Note that this would also delay the overall run time of any manual runs by 1 minute...
No, there has been no change to the logging options (except a numerical override per-profile). If you want profiles that can be run by more than one user to have their logs visible to both/all the users, each user should edit their Preferences > Log Settings to point to the same common location. By default the location includes a user-based variable, for added security (in order to leverage Windows security to also prevent unauthorised manual access), and so does the overall per-profile NameOfProfile_Logs.ini list of logs (so that when user-A tries to view the log of a profile last run by user-B, that user-variable (in the INI) evaluates wrongly). The trick is to use a setting that doesn't include a user-based variable.
By default it does, but you're perfectly welcome to change it to where you like and avoid the user-variable
